Cheesy Haloumi and Luncheon Meat Scramble

1.In a medium bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.

2.Heat a non-stick skillet over medium heat and add the diced haloumi cheese. Cook for about 2-3 minutes until it starts to brown and soften, stirring occasionally.

3.Add the diced luncheon meat to the skillet with the haloumi and cook for another 2-3 minutes until the meat is heated through and slightly crispy.

4.Pour the whisked eggs into the skillet, stirring gently to combine with the haloumi and luncheon meat. Cook for about 3-4 minutes, stirring occasionally, until the eggs are just set but still creamy.

5.Sprinkle the grated Gouda cheese over the egg mixture and cover the skillet with a lid. Allow the cheese to melt for about 1-2 minutes.

6.Once the cheese is melted and the eggs are cooked to your liking, remove the skillet from heat. Garnish with chopped fresh parsley before serving.
