Spicy Tomato Thokku - A Flavorful South Indian Relish

1.Heat oil in a pan over medium heat.

2.Add mustard seeds and let them splutter.

3.Add cumin seeds, urad dal, and chana dal; sauté until golden brown.

4.Add slit green chilies and ginger-garlic paste; sauté until the raw smell disappears.

5.Stir in the chopped tomatoes and mix well.

6.Add turmeric powder, red chili powder, coriander powder, and salt; mix thoroughly.

7.Cook the mixture on medium heat until the tomatoes become soft and mushy, stirring occasionally.

8.If using, add jaggery to balance the flavors and stir well.

9.Cook until the oil separates from the mixture, indicating it's done.

10.Garnish with fresh coriander leaves before serving.
