Zesty Sprite Cheesecake with a Refreshing Citrus Twist

1.Preheat your oven to 325°F (160°C).

2.In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of sugar. Mix until well combined and the mixture resembles wet sand.

3.Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

4.In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

5.Gradually add 1 cup of sugar and continue to beat until well combined and fluffy.

6.Add the vanilla extract, eggs (one at a time), sour cream, Sprite, lemon juice, lime juice, cornstarch, and salt. Mix until everything is well incorporated and smooth.
