Kaju Katli - A Rich Cashew Fudge

1.Soak the cashew nuts in water for about 2 hours, then drain and dry them thoroughly.

2.In a blender, grind the soaked cashew nuts into a fine powder. Be careful not to over-blend, as it can turn into cashew butter.

3.In a non-stick pan, add the sugar and milk. Stir over medium heat until the sugar dissolves completely.

4.Once the sugar is dissolved, add the cashew powder and mix well. Cook this mixture on low heat, stirring continuously to avoid burning.

5.After about 5-7 minutes, the mixture will start to thicken. Add the ghee and cardamom powder, and continue to stir until the mixture starts to leave the sides of the pan and forms a dough-like consistency.

6.Remove the mixture from the heat and let it cool slightly. Grease a flat surface or a plate with ghee.

7.Transfer the mixture onto the greased surface and flatten it with a rolling pin to about 1/4 inch thickness.

8.Allow it to cool completely, then cut into diamond or square shapes using a sharp knife.
