Exotic Dragon Fruit Cake with Cream Cheese Frosting

1.Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

2.In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3.In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

4.Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5.Mix in the dragon fruit puree until well combined.

6.Alternately add the flour mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.

7.Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

10.To make the frosting, beat the softened cream cheese and butter together until smooth and creamy.

12.Stir in the vanilla extract and dragon fruit puree until the frosting is evenly colored and flavored.

13.Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake.

14.Garnish with fresh dragon fruit slices on top for an extra touch of elegance.

15.Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
