Brazilian Fubá and Bean Casserole

1.Preheat your oven to 350°F (175°C).

2.In a large mixing bowl, combine the fubá, all-purpose flour, salt, and baking powder. Mix well to ensure even distribution of the dry ingredients.

3.In a separate bowl, heat the vegetable oil and sauté the chopped onion and minced garlic until they are translucent and fragrant, about 5 minutes.

4.Add the sautéed onion and garlic mixture to the dry ingredients and mix until combined.

5.Gradually add the water to the mixture, stirring continuously until you achieve a smooth batter.

6.Fold in the cooked rice, black beans, and pasta into the batter until evenly distributed.

7.In a greased baking dish, pour the batter and spread it evenly.

8.Sprinkle the cornstarch on top of the batter for added texture and crispiness.

9.Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

10.Remove from the oven and let it cool for a few minutes before slicing and serving.
