Ultimate Beefy Chilli Con Carne

1.Heat the olive oil in a large pot over medium heat.

2.Add the diced onion and sauté for about 5 minutes until translucent.

3.Stir in the minced garlic and cook for an additional minute until fragrant.

4.Add the diced red and green bell peppers, carrots, and celery to the pot. Cook for about 5-7 minutes until the vegetables are softened.

5.Increase the heat to medium-high and add the minced beef to the pot. Cook until browned, breaking it apart with a spoon, about 8-10 minutes.

6.Once the beef is browned, stir in the ground cumin, smoked paprika, dried oregano, and cayenne pepper. Cook for another 2 minutes to toast the spices.

7.Add the chopped tomatoes, kidney beans, tomato paste, beef broth, and Worcestershire sauce to the pot. Stir well to combine all ingredients.

8.Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally, until the chili thickens and the flavors meld together.

9.Season with salt and pepper to taste before serving.

10.Serve hot, garnished with fresh cilantro.
