Sweet Milk Pudding with a Hint of Vanilla

1.In a medium saucepan, combine the milk, sugar, and salt. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is warm but not boiling.

2.In a separate bowl, whisk together the eggs and cornstarch until smooth and well combined.

3.Slowly pour the warm milk mixture into the egg mixture while whisking continuously to temper the eggs and prevent them from scrambling.

4.Once combined, return the mixture to the saucepan and cook over medium heat, stirring constantly until the pudding thickens and coats the back of a spoon, about 5-7 minutes.

5.Remove the saucepan from heat and stir in the vanilla extract.

6.Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

7.Refrigerate for at least 2 hours or until set and chilled.

8.Serve chilled, optionally garnished with whipped cream or fresh fruit.
