Spaghetti Aglio e Olio with a Zesty Twist

1.Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

2.In a large skillet over medium heat, add the olive oil. Once hot, add the sliced garlic and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic as it can become bitter.

3.Add the red pepper flakes to the skillet and stir for about 30 seconds to release their flavor.

4.Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.

5.Stir in the lemon zest and juice, chopped parsley, and season with salt and freshly ground black pepper to taste. Toss everything together until well combined.

6.Remove from heat and serve immediately, topped with grated Parmesan cheese and additional parsley if desired.
