Decadent Chocolate Chip Red Velvet Cupcakes

1.Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

2.In a large mixing bowl, sift together the flour, sugar, baking soda, baking powder, salt, and cocoa powder until well combined.

3.In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until smooth.

4.Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.

5.Fold in the chocolate chips gently until evenly distributed throughout the batter.

6.Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.

7.Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

9.While the cupcakes are cooling, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter together until creamy and smooth.

10.Gradually add the powdered sugar, mixing on low speed until combined. Add the vanilla extract and mix until well incorporated. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.

11.Once the cupcakes are completely cool, frost them generously with the cream cheese frosting using a piping bag or a spatula.

12.For an extra touch, sprinkle some additional chocolate chips on top of the frosted cupcakes.
