Ingredients: 8 chunky, spicy, good-quality Italian sausages; 6 tbsp extra virgin olive oil; ¼ tsp chili flakes; you may want more if your sausages aren't that spicy; ¼ tsp fennel seeds; bashed a bit in a mortar; 2 onions; finely sliced; 450 g potatoes; peeled and cut into slices about 3 millimeters thick; 3 garlic cloves; finely sliced; 1 red pepper; halved, deseeded and sliced; 1 yellow pepper; halved, deseeded and sliced; sea salt flakes; freshly ground black pepper; 250 g tomatoes; sliced; 30 g pecorino cheese; finely grated; 2 tbsp flat leaf parsley leaves; or the leaves from 4 oregano sprigs; roughly chopped

You can use either waxy or floury potatoes; the floury variety will take a little less time to cook. (If you opt for small waxy potatoes, you don't need to peel them.) This calls for some peppery leaves on the side.
