Zesty Coconut Chicken Satay with Peanut Drizzle

1.In a large bowl, combine coconut milk, soy sauce, lime juice, brown sugar, minced garlic, ground ginger, turmeric, cumin, coriander, and cayenne pepper. Mix well to create the marinade.

2.Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

3.Preheat your grill or grill pan over medium heat.

4.Thread the marinated chicken strips onto the soaked wooden skewers, leaving a little space between each piece.

5.Grill the chicken skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

6.While the chicken is grilling, prepare the peanut drizzle by whisking together the peanut butter, honey, rice vinegar, soy sauce, and water in a small bowl until smooth. Adjust the consistency with more water if necessary.
