Turmeric Garlic Grilled Chicken

1.In a large bowl, combine the turmeric, minced garlic, black pepper, thyme, tarragon, lime juice, and melted butter to create a marinade.

2.Add the chicken breasts to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for better flavor.

3.Preheat your grill to medium-high heat.

4.Remove the chicken from the marinade and let any excess drip off. Season both sides with salt to taste.

5.Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink inside.

6.While the chicken is grilling, toss the sliced red onion in the remaining marinade and grill them alongside the chicken for about 4-5 minutes, until they are tender and slightly charred.

7.Once cooked, remove the chicken and grilled onions from the grill and let the chicken rest for a few minutes before slicing.

8.Serve the grilled chicken with the charred red onions on top, garnished with additional lime wedges if desired.
