Spicy Tuna Roll Extravaganza

1.Rinse the sushi rice under cold water until the water runs clear to remove excess starch. This helps achieve the perfect texture.

2.In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

3.In a small saucepan, combine rice vinegar, sugar, and salt over low heat. Stir until sugar and salt dissolve. Once dissolved, remove from heat and let cool.

4.Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Be careful not to mash the rice. Allow the rice to cool to room temperature.

5.In a medium bowl, mix together the diced tuna, mayonnaise, sriracha sauce, sesame oil, and soy sauce. This will be your spicy tuna filling.

6.Place a bamboo sushi mat on a clean surface and lay a sheet of nori shiny side down on the mat. Wet your hands to prevent sticking, then take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

7.In the center of the rice, place a line of the spicy tuna mixture and a few slices of avocado. You can also add a small amount of wasabi for extra kick if desired.

8.Using the sushi mat, carefully roll the nori away from you, pressing gently but firmly to shape the roll. Continue rolling until you reach the exposed edge of the nori. Moisten the edge with a little water to seal the roll.

9.Once rolled, use a sharp knife to slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

10.Repeat the process with the remaining nori sheets and filling ingredients.

11.Arrange the sushi rolls on a serving platter, garnish with chopped green onions, and serve with pickled ginger and soy sauce on the side.
