Volcano Pancakes with Lava Syrup

1.In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

2.In another bowl, beat the eggs and then mix in the buttermilk, melted butter, and vanilla extract until smooth.

3.Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.

4.Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

5.For each pancake, pour about 1/2 cup of batter onto the skillet. Use the back of a spoon to shape the batter into a tall mound, creating a volcano shape.

6.Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

7.While the pancakes are cooking, prepare the lava syrup by mixing the strawberry syrup with red food coloring in a small saucepan over low heat until warmed through.

8.Stack the pancakes high on a serving plate to resemble a volcano, then pour the warm lava syrup over the top, allowing it to flow down the sides.

9.Garnish with fresh strawberries and a dollop of whipped cream on top for an extra treat.
