Spiced Ajwain Lentil Soup

1.Heat olive oil in a large pot over medium heat.

2.Add chopped onions and sauté until translucent, about 5 minutes.

3.Stir in minced garlic, grated ginger, and ajwain seeds; cook for another 2 minutes until fragrant.

4.Add diced carrots and chopped tomatoes; cook for 5 minutes until softened.

5.Stir in turmeric powder, coriander powder, and cumin seeds; cook for 1 minute to toast the spices.

6.Add rinsed lentils and vegetable broth to the pot; bring to a boil.

7.Reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.

8.Stir in garam masala, lemon juice, salt, and pepper; adjust seasoning to taste.

9.Use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.

10.Serve hot, garnished with fresh cilantro.
