Mini Christmas Sapin-Sapin Trees

1.In a mixing bowl, combine glutinous rice flour, coconut milk, sugar, and salt. Mix until smooth and well combined.

2.Divide the mixture into two equal parts. To one part, add the pandan juice and mix until fully incorporated. To the other part, add the ube halaya and mix until the color is uniform.

3.Grease a mini Christmas tree mold with a little coconut oil to prevent sticking. Fill the mold halfway with the pandan mixture, smoothing the surface with a spatula.

4.Carefully spoon the ube mixture on top of the pandan layer, filling the mold to the top. Smooth the surface again.

5.Place the filled mold in a steamer over boiling water. Cover and steam for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

6.Once cooked, remove the mold from the steamer and let it cool for about 10 minutes. Gently remove the sapin-sapin trees from the mold and place them on a serving platter.

7.Sprinkle the tops of the mini sapin-sapin trees with toasted coconut flakes to resemble snow. Garnish each tree with a star anise on top as a decorative star.
