1.In a large bowl, combine the lemongrass, garlic, fish sauce, soy sauce, brown sugar, chili flakes, and vegetable oil. Mix well to create the marinade.

4.Thread the marinated beef, pineapple cubes, red and yellow bell peppers, and red onion alternately onto the soaked skewers.

7.While the skewers are grilling, prepare the peanut sauce by combining the roasted peanuts, coconut milk, lime juice, peanut butter, and soy sauce in a small saucepan. Cook over low heat, stirring constantly, until the sauce is smooth and slightly thickened.
