Tropical Jack Fruit Ice Cream Delight

1.In a blender, combine the ripe jack fruit pulp and 1 cup of whole milk. Blend until smooth and set aside.

2.In a medium saucepan, whisk together the remaining 1 cup of milk, sugar, cornflour, milk powder, and a pinch of salt until the mixture is smooth and free of lumps.

3.Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens to a custard-like consistency, about 7-10 minutes. Remove from heat.

4.Slowly pour the jack fruit and milk blend into the thickened custard mixture, stirring continuously to combine well.

5.Add vanilla extract if using, and mix thoroughly.

6.Allow the mixture to cool to room temperature, then cover and refrigerate for at least 30 minutes to chill completely.
