Fusion Chicken Idli Sandwiches

1.Prepare the chicken gravy beforehand or use leftover chicken gravy. Ensure the chicken pieces are shredded or crumbled into small bits.

2.In a pan, heat oil over medium heat. Add finely chopped onions and sauté until translucent.

3.Add chopped tomatoes and green chili, cook until tomatoes soften and oil separates.

4.Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.

5.Add the shredded chicken pieces from the gravy to the pan. Stir well to coat the chicken with the spices. Cook for 3-4 minutes until the mixture is slightly dry but moist enough to spread.

6.Remove from heat and stir in chopped coriander leaves. Let the mixture cool slightly.

7.Slice each idli horizontally to create two thin layers. You should have 8 slices in total.

8.Take one idli slice and spread a generous amount of the chicken mixture evenly over it. Optionally, sprinkle grated cheese over the chicken mixture.

9.Top with another idli slice to form a sandwich. Repeat for the remaining slices and chicken filling.

10.Heat a non-stick pan or griddle over medium heat. Spread a thin layer of butter on the outer sides of each sandwich.

11.Place the sandwiches on the pan and grill for 3-4 minutes on each side or until golden brown and slightly crispy. Press gently with a spatula to ensure even grilling.

12.Remove the sandwiches from the pan and let them cool for a minute before slicing diagonally.

13.Serve warm with green chutney or tomato ketchup as a fusion snack.
