Birthday Cake Cookie Crumble Trifle

1.Prepare the cookie crumble: Crush the birthday cake cookies into coarse crumbs using a food processor or by placing them in a zip-top bag and crushing with a rolling pin. Transfer crumbs to a bowl and stir in the melted butter until evenly moistened.

2.Prepare the pudding layer: In a large bowl, whisk together the instant vanilla pudding mix and cold milk according to package directions until thickened. Gently fold in 1 cup of heavy whipping cream.

3.Prepare the whipped cream layer: In a separate bowl, beat 1 cup of heavy whipping cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.

4.Assemble the trifle: In a large trifle dish or individual serving glasses, create layers starting with a layer of the buttered cookie crumbs. Spoon half of the vanilla pudding mixture over the crumbs. Sprinkle half of the rainbow sprinkles over the pudding.

5.Add another layer of cookie crumbs, followed by the remaining pudding mixture. Top with the whipped cream layer, spreading it evenly.

6.Garnish the trifle generously with additional rainbow sprinkles and optional fresh berries. Chill for at least 30 minutes before serving to allow the flavors to meld.
