Ingredients: 3 oz dried Ancho chilies → rehydrated and seeded Or (see below); ½ cup Ancho chili powder (1:3 or 1:4 boiling water to rehydrate). Do not use if using rehydrated chilis above.; ⅓ cup oil (for frying + blending); 3 large shallots (~1 cup diced); 6-8 cloves garlic; 1 Tbs fresh ginger (or 1½ tsp paste); 1 cup lemongrass–turmeric paste (comes in 3.62oz (~1/2cup) jars at the store); 1 Tbs Shrimp paste or anchovy paste; 2 Tbs fish sauce; 1 tsp lime zest; ½ tsp ground coriander; ¼ tsp ground cumin

This Thai curry paste, is not made with red Thai chilies which are hot. Is made with ancho Chili's which are very mild, you can use as much as you want without increasing the heat in dishes. I use lemongrass and turmeric paste because my store does not carry lemongrass or galangal. I use anchovy paste and fish sauce because my store does not carry shrimp paste.
