Enhanced Herb-Crusted Rack of Lamb with Balsamic Reduction

1.Prepare the Lamb Marinade: In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, 1 tablespoon of the olive oil, sea salt, and black pepper. Mix thoroughly to form a thick paste.

2.Prepare the Lamb: Pat the rack of lamb completely dry with paper towels. This is crucial for a good crust. Generously rub the herb and garlic mixture all over the entire surface of the lamb rack, pressing firmly so the herbs adhere.

3.Marinate: Place the seasoned lamb in a dish, cover loosely, and refrigerate for a minimum of 2 hours, or ideally up to 12 hours, to allow the flavors to penetrate.

4.Preheat Oven: Preheat your oven to 200°C (392°F).

5.Sear the Lamb: Heat the remaining 2 tablespoons of olive oil in a heavy, oven-safe skillet (cast iron preferred) over medium-high heat. Once shimmering, carefully place the lamb rack, fat-side down, into the hot skillet. Sear for 3-4 minutes until the fat cap is deeply golden brown and crisp. Sear briefly on the other sides as well.

6.Roast: Transfer the skillet directly to the preheated oven. Roast for 15-20 minutes for medium-rare (internal temperature of 57°C / 135°F), or 22-25 minutes for medium (63°C / 145°F).

7.Rest: Remove the lamb from the oven, transfer it to a cutting board, tent loosely with foil, and let it rest for a crucial 10-15 minutes before slicing. This allows the juices to redistribute.

8.Make the Balsamic Reduction: While the lamb rests, combine the balsamic vinegar, brown sugar, and rosemary sprig in a small saucepan. Bring to a simmer over medium heat, then reduce the heat to low. Let it gently simmer, stirring occasionally, for 10-15 minutes, or until the liquid has reduced by half and coats the back of a spoon lightly. Remove the rosemary sprig before serving.

9.Prepare the Appetizer: Combine the feta cheese, Greek yogurt, 1 tablespoon of olive oil, oregano, and black pepper in a food processor. Blend until completely smooth and creamy. Taste and adjust seasoning if necessary.

10.Serve: Slice the rested rack of lamb into individual chops. Serve immediately, drizzled generously with the warm balsamic reduction, alongside the whipped feta dip for an elegant starter.
