Moist Dark Chocolate Cola Muffins (Egg & Oil-Free)

1.Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.

2.In a large bowl, combine the chocolate cake mix and 1.5 cups of Coles Que Cola. Mix with an electric mixer on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes, or until well combined and smooth. Do not overmix.

3.Gently fold in the melted dark chocolate until just incorporated.

4.Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

5.Sprinkle the dark chocolate chips generously over the top of each muffin.

6.Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out with moist crumbs attached (not wet batter).

7.Remove the muffins from the oven and let them cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
