Curry Mackerel with Coconut and Cherry Sauce

1.Preheat the oven to 180°C (355°F).

Prepare the Mackerel Rinse the mackerel fillets under cold water and pat dry with paper towels. Season both sides of the fillets with salt and pepper.

3.In a medium-sized bowl, whisk together the coconut milk, curry, honey, lime juice, and a pinch of salt and pepper. Set aside.

Cook the Mackerel Heat a non-stick skillet over medium-high heat. Add a drizzle of oil and place the mackerel fillets skin-side down in the skillet. Cook for 3-4 minutes until the skin is crispy and golden brown.

5.Flip the fillets using a spatula and cook for an additional 2-3 minutes until the flesh is opaque and cooked through.

6.Remove the fillets from the skillet and transfer them to a baking dish. Pour the coconut curry sauce over the fillets, covering them evenly.

Prepare the Cherry Sauce If using fresh cherries, remove the pits and roughly chop. If using cherry jam, skip to the next step.

8.In a small saucepan, heat the fresh cherries (or cherry jam) over medium heat. Stir until the cherries release their juices and the sauce thickens slightly, about 5 minutes.

9.Pour the cherry sauce over the coconut curry sauce in the baking dish.

10.Sprinkle the coconut chips over the top of the dish.

Bake the Dish Place the baking dish in the preheated oven and bake for 10-12 minutes, or until the coconut chips are golden brown.

12.While the dish is baking, prepare the poached eggs. Fill a medium-sized saucepan with water and bring it to a gentle simmer. Crack the eggs into separate small bowls.

13.Create a gentle whirlpool in the simmering water by stirring it with a spoon. Carefully slide the eggs, one at a time, into the simmering water, making sure to keep the whites close to the yolks. Poach the eggs for 3-4 minutes until the whites are set but the yolks are still runny. Remove the eggs from the water using a slotted spoon.

Serve the Dish Divide the mackerel fillets and sauce among serving plates. Top each plate with a poached egg. Garnish with fresh cilantro, if desired. Serve immediately and enjoy!
