Calamari Rings

1.Start by cleaning the calamari. Cut the calamari into rings, discarding the tentacles if desired.

2.In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper for the batter.

3.Gradually add the cold water to the dry ingredients while whisking until a smooth batter is formed.

4.Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).

5.Dip the calamari rings into the batter, allowing any excess batter to drip off.

Frying the Calamari Carefully place the battered calamari rings into the hot oil, a few at a time, and fry for 2-3 minutes or until golden brown and crispy. Remove from the oil using a slotted spoon and transfer to a paper towel-lined plate to drain any excess oil. Repeat with the remaining calamari rings.

Making the Dipping Sauce In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, paprika, salt, and pepper until well combined. Adjust the seasoning to taste.

8.Serve the fried calamari rings hot with the tangy dipping sauce on the side.
