Cook the Rice Cook the jasmine rice according to the package instructions or using a rice cooker. Let it cool slightly.

Prepare the Peanut Sauce In a blender or food processor, blend the roasted peanuts, garlic, red chillies, tamarind juice, palm sugar, salt, and water until smooth. Set aside.

Prepare the Vegetables Blanch the bean sprouts and long beans in boiling water for 1-2 minutes, then drain and rinse with cold water.

Assemble the Pecel Rice To serve, place a portion of cooked rice on a plate. Arrange the sliced cucumber, blanched bean sprouts, long beans, and cabbage leaves on the side. Drizzle the peanut sauce over the rice and vegetables. Top with sliced hard-boiled eggs, fried tempeh, fried tofu, and crackers.
