Kvas

1.Cut the rye bread into small cubes or tear it into small pieces.

2.Place the rye bread in a large pot and add water. Stir to combine.

3.Cover the pot with a clean cloth and let it sit at room temperature for 8-12 hours to allow fermentation.

4.After fermentation, strain the liquid to remove the bread solids. Discard the bread solids or use them for other recipes.

5.Dissolve sugar in the liquid and stir until completely dissolved.

6.Sprinkle the dry yeast over the liquid and let it sit for 30 minutes to activate.

7.Add sliced lemon and raisins to the pot for flavoring.

8.Cover the pot again and let it sit at room temperature for an additional 8-12 hours to allow further fermentation.

9.After fermentation, strain the liquid again to remove the lemon and raisins.

10.Transfer the kvas to bottles or jars and refrigerate for at least 4 hours before serving.
