Chicken with Onion and Garlic

Marinate the Chicken In a large bowl, combine the olive oil, minced garlic, salt, and pepper. Add the chicken thighs and toss to coat. Marinate for at least 30 minutes or overnight in the refrigerator.

Caramelize the Onions and Garlic Heat a large skillet over medium heat. Add the butter and melt. Add the sliced onions and minced garlic. Cook until the onions are caramelized and golden brown, about 15-20 minutes. Stir occasionally to prevent burning.

Cook the Chicken Push the onions and garlic to one side of the skillet. Increase the heat to medium-high. Add the marinated chicken thighs to the skillet, skin side down. Cook for 4-5 minutes, until the skin is browned and crispy. Flip the chicken thighs and cook for another 4-5 minutes.

Make the Sauce Reduce the heat to medium. Add the chicken broth, soy sauce, sugar, dried thyme, salt, and pepper to the skillet. Stir to combine. Cover and simmer for 10-15 minutes, until the chicken is cooked through and the flavors have melded together.
