Mediterranean Garden Pasta Salad

1.Boil the potatoes until tender, then dice them. Cook the pasta according to package instructions, rinse with cold water, and set aside. Dice the red and yellow paprika, courgette, tomatoes, cucumber, and onion. Cut the mozzarella into cubes. Tear the bread into small pieces.

2.In a large bowl, combine the cooked pasta, diced potatoes, paprika, courgette, tomatoes, cucumber, onion, mozzarella, and salad mix. Add the pesto and toss everything together until well mixed. Chill in the refrigerator for at least 30 minutes to let the flavors meld.

3.Serve the Mediterranean garden pasta salad cold as a refreshing side dish or light meal.
