Roasted Chicken and Bacon Potato Skillet

1.Preheat the oven to 400°F (200°C).

2.In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the skillet.

3.Add the diced potatoes to the skillet with the bacon grease. Cook until the potatoes are golden brown and slightly crispy, stirring occasionally.

4.Push the potatoes to one side of the skillet and add the chicken breasts. Cook the chicken until browned on both sides.

5.Add the mixed vegetables to the skillet and cook until they are tender.

6.Return the cooked bacon to the skillet and mix everything together.

7.Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through.
