Celebration Pate

1.Rinse the chicken livers under cold water and pat them dry with paper towels.

2.In a skillet, melt the butter over medium heat.

3.Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

4.Increase the heat to medium-high and add the chicken livers to the skillet. Cook until they are browned on the outside but still slightly pink on the inside, about 5 minutes.

5.Pour in the brandy and let it simmer for 2-3 minutes to cook off the alcohol and reduce slightly.

6.Reduce the heat to low and add the heavy cream, nutmeg, allspice, cloves, black pepper, dried thyme, and dried sage to the skillet. Stir to combine all the ingredients well.

7.Continue cooking the mixture over low heat for another 5-7 minutes until the livers are fully cooked through and tender.

8.Remove the skillet from the heat and allow the mixture to cool slightly for 5 minutes.

9.Transfer the mixture to a food processor and blend until smooth and creamy. You can adjust the consistency by adding more cream if needed.

10.Spoon the pate into a serving dish or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.

11.Serve the celebration pate with toast points, crackers, or sliced baguette. Enjoy the luxurious flavors of this special dish!
