Easter Spring Rolls

1.Prepare all the ingredients by slicing and julienning the vegetables, shredding the lettuce, and slicing the hard-boiled eggs.

2.Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds, or until soft.

3.Place the softened rice paper onto a clean surface.

4.In the center of the rice paper, layer a small amount of lettuce, carrots, cucumber, bell pepper, mint leaves, cilantro leaves, and a few slices of hard-boiled egg.

5.Fold the bottom of the rice paper over the filling, then fold in the sides, and roll it up tightly.

6.Repeat with the remaining ingredients and rice paper wrappers.

7.Serve the spring rolls with hoisin sauce, peanut sauce, and sweet chili sauce for dipping.

8.Enjoy these colorful Easter spring rolls as a festive and flavorful appetizer or side dish!
