Rolled Egg Noodles

1.Beat the eggs in a bowl and season with a pinch of salt and pepper. Heat a non-stick pan over medium heat and pour a thin layer of the beaten eggs to make a thin omelette. Cook until set, then remove from the pan and repeat with the remaining egg mixture. Set aside to cool, then roll up the omelettes and slice thinly to create egg ribbons.

2.Cook the egg noodles according to package instructions. Drain and set aside.

3.In the same pan, heat vegetable oil over medium heat. Add garlic and stir-fry until fragrant.

4.Add carrot, cabbage, and bean sprouts. Stir-fry for 2-3 minutes until vegetables are slightly softened.

5.Add the cooked egg noodles to the pan. Pour in soy sauce, oyster sauce, sugar, and white pepper. Toss everything together until well combined and heated through.

6.Place a portion of the noodle mixture on a flat surface. Arrange a few egg ribbons on top and roll up the noodles tightly to form a roll.

7.Repeat with the remaining noodle mixture and egg ribbons.
