Herb-Crusted Lamb Chops with Garlic Mashed Potatoes

1.Preheat your oven to 400°F (200°C).

2.In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper with the olive oil to create a marinade.

3.Rub the marinade all over the lamb chops, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.

4.While the lamb is marinating, place the cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

5.Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth and creamy. Adjust seasoning with salt and pepper to taste. Keep warm.

6.In a shallow dish, combine the breadcrumbs and grated Parmesan cheese. Dredge each marinated lamb chop in the breadcrumb mixture, pressing gently to adhere the crumbs to the meat.

7.Heat a large oven-safe skillet over medium-high heat. Add a little olive oil and sear the lamb chops for about 2-3 minutes on each side until golden brown.

8.Transfer the skillet to the preheated oven and roast the lamb chops for about 8-10 minutes for medium-rare, or until they reach your desired doneness.

9.Remove the skillet from the oven and let the lamb chops rest for 5 minutes before serving.

10.Serve the herb-crusted lamb chops alongside the garlic mashed potatoes, garnished with additional fresh herbs if desired.
