Colorful Bell Pepper Pasta Delight

1.Bring a large pot of salted water to a boil. Add the spaghetti or penne noodles and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

2.In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.

3.Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.

4.Stir in the diced red and yellow bell peppers. Cook for about 5-7 minutes, stirring occasionally, until the peppers are tender but still vibrant in color.

5.Season the vegetable mixture with salt and pepper to taste.

6.Add the cooked noodles to the skillet with the bell pepper mixture. Toss everything together, adding a splash of reserved pasta water if needed to help combine.

7.If desired, sprinkle grated Parmesan cheese over the pasta and toss to combine.

8.Serve hot, garnished with fresh basil leaves if using.
