Authentic Pallippalayam Chicken Curry

1.Heat coconut oil in a large pan over medium heat.

2.Add the finely sliced onions and sauté until they turn golden brown.

3.Stir in the ginger-garlic paste and green chilies, cooking for another 2-3 minutes until fragrant.

4.Add the chicken pieces to the pan and cook until they are browned on all sides, about 5-7 minutes.

5.Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the chicken evenly with the spices.

6.Pour in the water, cover the pan, and let it simmer for 15-20 minutes until the chicken is cooked through and tender.

7.Once the chicken is cooked, add the fresh grated coconut and garam masala. Stir well and cook for an additional 5 minutes, allowing the flavors to meld together.

8.Garnish with fresh coriander leaves before serving.
