Creamy Curry Pasta with Skyr Sauce

1.Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

2.In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

3.Add the minced garlic and diced bell pepper to the skillet, cooking for an additional 3-4 minutes until the bell pepper is tender.

4.Stir in the curry powder and cook for 1 minute to release its flavors.

5.Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes to reduce slightly.

6.Lower the heat and stir in the skyr and honey, mixing until well combined and creamy. Season with salt and pepper to taste.

7.Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the curry sauce.

8.Serve hot, garnished with fresh cilantro.
