Unicorn Bento Sandwich and Rainbow Garlic Cheesy Cauliflower

1.Preheat the oven to 400°F (200°C).

2.In a large bowl, toss the cauliflower florets with olive oil, minced garlic, salt, and pepper until well coated.

3.Spread the cauliflower on a baking sheet and roast in the oven for 20 minutes, stirring halfway through.

4.While the cauliflower is roasting, prepare the unicorn bento sandwich. Use a unicorn-shaped cookie cutter to cut out unicorn shapes from the slices of whole wheat bread.

5.In a small bowl, mix the cream cheese and honey until smooth.

7.Layer the sliced strawberries, blueberries, kiwi, and bananas on top of the cream cheese mixture.

8.Top with the remaining unicorn-shaped bread slices to form sandwiches.

9.Once the cauliflower is roasted, remove it from the oven and sprinkle with Parmesan cheese, mozzarella cheese, and red pepper flakes.

10.Return the cauliflower to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

11.Remove the cheesy cauliflower from the oven and let it cool slightly.

12.Arrange the unicorn sandwiches and rainbow garlic cheesy cauliflower on a bento box or plate, garnishing with shredded purple cabbage, shredded carrots, and shredded cheddar cheese for a colorful presentation.
