Cornbread Lasagna Delight

1.Preheat your oven to 375°F (190°C).

2.In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.

3.In another bowl, whisk together buttermilk, eggs, and melted butter.

4.Pour the wet ingredients into the dry ingredients and stir until just combined. Set aside.

5.In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.

6.Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and cooked through.

7.Stir in oregano, basil, red pepper flakes, and marinara sauce. Simmer for 5 minutes, then remove from heat.

8.In a 9x13 inch baking dish, spread half of the cornbread batter evenly on the bottom.

9.Layer half of the meat sauce over the cornbread batter.

10.Dollop spoonfuls of ricotta cheese over the meat sauce, spreading gently.

11.Sprinkle half of the mozzarella and Parmesan cheese over the ricotta.

12.Repeat the layers with the remaining cornbread batter, meat sauce, ricotta, mozzarella, and Parmesan cheese.

13.Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the cheese is bubbly.

14.Let the lasagna cool for 10 minutes before slicing and serving.
