Crispy Potato Corn Fritters

1.In a large mixing bowl, combine the grated potatoes, corn kernels, chopped onion, and minced garlic. Mix well to combine all the ingredients.

2.Add the cornflour, all-purpose flour, cumin powder, paprika, baking powder, cayenne pepper (if using), salt, and pepper to the potato mixture. Stir until everything is well incorporated and forms a thick batter.

3.Heat oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle immediately.

4.Once the oil is hot, take a spoonful of the batter and carefully drop it into the oil, flattening it slightly with the back of the spoon to form a fritter. Repeat this process, making sure not to overcrowd the pan.

5.Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to flip them carefully.

6.Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil.

7.Serve the crispy potato corn fritters hot with your favorite dipping sauce or chutney.
