Spicy Maggie Ramen Delight

1.In a large pot, bring 4 cups of water to a boil.

2.Add the Maggie noodles to the boiling water and cook for 2 minutes. Drain and set aside, reserving the water.

3.In the same pot, heat the vegetable oil over medium heat.

4.Add the sliced onion and sauté until translucent, about 3-4 minutes.

5.Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for another minute until fragrant.

6.Add the sliced bell pepper and julienned carrot to the pot. Cook for 3-4 minutes until the vegetables are slightly tender but still crisp.

7.Add the reserved noodle water back into the pot and bring to a simmer.

8.Stir in the spinach leaves and cook until wilted, about 1-2 minutes.

9.Add the cooked Maggie noodles back into the pot along with the soy sauce, chili sauce, sesame oil, and black pepper. Toss everything together gently to combine and heat through for another 2 minutes.

10.Taste and adjust seasoning if necessary, then remove from heat.
