Spiced Christmas Vegetable Curry Delight

1.Heat the vegetable oil in a large pot over medium heat.

2.Add the diced onion and sauté for about 5 minutes until translucent.

3.Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

4.Add the chopped red and green bell peppers, sliced carrots, diced zucchini, cauliflower florets, and green beans to the pot. Sauté the vegetables for about 5-7 minutes until they start to soften.

5.Sprinkle in the curry powder, ground cumin, ground coriander, turmeric, cinnamon, and cayenne pepper (if using). Stir well to coat the vegetables in the spices and cook for another 2 minutes to toast the spices.

6.Pour in the coconut milk and diced tomatoes, stirring to combine. Bring the mixture to a gentle simmer.
