Zesty Lemon Herb Chicken with Spinach

1.Heat the olive oil in a large sauté pan over medium-high heat.

2.Season the chicken breasts with salt, pepper, oregano, thyme, and paprika on both sides.

3.Once the oil is hot, add the seasoned chicken breasts to the pan and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).

4.Remove the chicken from the pan and set aside on a plate, covering it with foil to keep warm.

5.In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

6.Add the chicken broth, lemon juice, and lemon zest to the pan, scraping up any browned bits from the bottom.

7.Bring the mixture to a simmer and let it cook for 2-3 minutes to reduce slightly.

8.Add the fresh spinach to the pan and stir until wilted, about 1-2 minutes.

9.Return the chicken to the pan, spooning some of the sauce over the top to coat it in the lemony goodness.

10.Cook for an additional minute to heat the chicken through, then remove from heat.

11.Serve the chicken topped with the spinach and sauce, garnished with fresh parsley.
