One-Pan Classic Vanilla Sponge Cake with Frosting

1.Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

2.In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.

3.In another mixing bowl, beat the eggs and sugar together using an electric mixer on medium speed until the mixture is thick and pale, about 5 minutes.

4.Add the melted butter and vanilla extract to the egg mixture, and mix until combined.

5.Gradually add the dry flour mixture to the wet ingredients, alternating with the milk. Start and end with the flour mixture, mixing until just combined. Be careful not to overmix.

6.Pour the batter into the prepared baking pan and smooth the top with a spatula.

7.Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer the cake to a wire rack to cool completely.

9.While the cake is cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth. Add the vanilla extract and enough heavy cream or milk to reach your desired consistency.

10.Once the cake is completely cooled, spread the frosting evenly over the top using a spatula. Decorate with sprinkles or fresh berries if desired.
