One-Pot Acini de Pepe Delight

1.In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5 minutes.

2.Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent, about 3 minutes.

3.Stir in the diced red bell pepper and cook for another 2 minutes until slightly softened.

4.Add the acini de pepe pasta to the pot and stir well to combine with the sausage and vegetables.

5.Pour in the chicken broth and heavy cream, then add the Italian seasoning. Stir to combine and bring the mixture to a simmer.

6.Cover the pot and cook for about 10 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

7.Once the pasta is cooked, stir in the chopped spinach and grated Parmesan cheese. Cook for an additional 2 minutes until the spinach is wilted and the cheese is melted.

8.Season with salt and pepper to taste, and serve immediately.
