Fiesta Party Rice

1.Rinse the rice under cold water until the water runs clear, then drain.

2.In a large pot, heat a tablespoon of oil over medium heat. Add the diced red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

3.Add the bell peppers, corn, black beans, and cherry tomatoes to the pot, stirring to combine. Cook for another 3-4 minutes until the vegetables are slightly softened.

4.Stir in the rinsed rice, cumin, chili powder, paprika, salt, and black pepper, mixing well to coat the rice with the spices.

5.Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed all the liquid.

6.Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the rice to fluff up.

7.After resting, add the lime juice and chopped cilantro, gently fluffing the rice with a fork to combine all ingredients evenly.
