Lemonade Pool Party Granita

1.In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium heat, stirring occasionally until the sugar is completely dissolved. This will create a simple syrup.

2.Remove the saucepan from heat and allow the syrup to cool for about 10 minutes. Once cooled, stir in the freshly squeezed lemon juice, lemon zest, chopped mint leaves, and salt until well combined.

3.Pour the mixture into a shallow, freezer-safe dish (like a 9x13 inch baking dish) to allow for even freezing.

4.Place the dish in the freezer and freeze for about 1 hour. After 1 hour, use a fork to scrape the mixture, breaking up any ice crystals that may have formed. Return the dish to the freezer.

5.Continue to freeze and scrape the mixture every 30 minutes for about 3 more hours, until the granita is fluffy and has a snow-like texture.

6.Once ready, use a fork to fluff the granita one last time before serving. Spoon the granita into chilled cups or bowls for serving.

7.Garnish each serving with additional mint leaves and a slice of lemon for a refreshing presentation.
