Banana Cloud Mousse

1.In a large mixing bowl, mash the ripe bananas with a fork until smooth, leaving some small chunks for texture.

2.Add the fresh lemon juice to the mashed bananas, stirring gently to combine. This will enhance the flavor and prevent browning.

3.In a separate bowl, whip the heavy cream using an electric mixer on medium speed until soft peaks form, about 3-4 minutes.

4.Gradually add the powdered sugar and vanilla extract to the whipped cream, continuing to whip until stiff peaks form, about 2 more minutes.

5.Gently fold the banana mixture into the whipped cream using a spatula, being careful not to deflate the whipped cream. Mix until just combined and fluffy.

6.Spoon the mousse into serving dishes or glasses, smoothing the tops with a spatula.

7.Chill the mousse in the refrigerator for at least 1 hour to allow it to set and develop flavors.

8.Before serving, garnish with fresh banana slices and mint leaves if desired.
