Cocktail Tropical Pétillant aux Perles d'Eau

1.Prepare the water pearls according to the package instructions, typically soaking them in water for several hours until they expand and become gelatinous.

2.In a blender, combine the fresh mango puree, coconut milk, honey, and lime juice. Blend until smooth and well combined. Taste and adjust sweetness if necessary by adding more honey.

3.In a large pitcher, mix the blended mango-coconut mixture with the sparkling water. Stir gently to combine without losing too much carbonation.

4.To serve, fill a glass with ice cubes and add a few tablespoons of prepared water pearls to the bottom.

5.Pour the tropical mixture over the pearls, filling the glass to the rim.

6.Garnish with fresh mint leaves and a slice of mango on the rim of the glass.
